Rancho Valencia in Rancho Santa Fe, CA

Since opening in 1989, the multi-award winning Rancho Valencia Resort & Spa has garnered a reputation as one of the most sought after luxury properties on the West Coast.  Tucked away on 45 acres of olive groves and lush gardens, the Mediterranean-inspired, all suite property recently underwent a $30,000,000 renovation.  This included completely remodeled guest casitas, a brand new restaurant and bar, remodeled meeting space, as well as major enhancements to The Spa and the fitness center.  The luxurious offerings include 49 well appointed guest casitas all with their own private patios, a wellness-oriented fitness program at The Spa, an award-winning tennis program and rejuvenating spa treatments.  The two distinctive restaurants on property are Veladora and The Pony Room, each showcasing Executive Chef Eric Bauer’s farm-to-table philosophy.

Rancho Valencia was just listed on the Conde Nast Traveler’s 2013 Hot List and was ranked the #7 resort in the country and the #1 resort in California by U.S. News & World Report (2012) and also won a 2012 Silver Sage Spa Award from Spa Magazine.  In 2011, the resort was listed among Conde Nast Traveler’s and Andrew Harper’s Hideaways, “World’s Best Resorts” lists, in addition to being named one of Travel + Leisure’s “Best 500 Hotels” and Tennis magazine’s “#1 U.S. Tennis Resort in 2010”.

There is no better way to wake up than with a glass of fresh-squeezed orange juice and a newspaper delivered to your door each and every morning.  Enjoy a pampering bath with their custom-blended organic bath products.  In the evening, immerse yourself in the romance with a bottle of wine and a glowing fire on your private garden patio.

Get yourself ready for more than a few amazing surprises as you dine at Rancho Valencia’s Veladora restaurant.  Veladora serves handcrafted, fresh and simply delicious Coastal Ranch cuisine for breakfast, lunch and dinner.  The ambience is that of an inviting hacienda, where sun-dappled afternoons and stunning valley views fade into captivating candlelit evenings.

Executive Chef Eric Bauer lets the true flavors of seasonal ingredients take center stage on a menu that blends the area’s bounty of vegetables and fruits with unique pairings of poultry, seafood and varieties of eats.  Sample slow poached Maine lobster with lemon vinaigrette, buratta cheese, and pickled and roasted beets with avocado from a local farm.  Or savor a slow pan roasted filet mignon.  The choices are abundant… and delicious.

Offering the only Prosecco on draft in Southern California, The pony Room is destined to become a favorite among locals and resort guests alike.  In addition to a wide selection of locally brewed craft beers and 100 variations of tequila, the bar also serves one of the area’s most impressive collections of high-end wines and hand-crafted, one-of-a-kind signature cocktails, such as the “Made Pony” with organic strawberries, hand-pressed lime juice and agave nectar.

The Pony Room is more than a bar.  Serving rustic American cuisine with simple dishes that are fresh, including Maine lobster sliders with preserved local lemon, herb aioli and butter lettuce on brioche buns, and skirt steak asada tacos with a Serrano citrus glaze.  Dishes are uniquely presented on items such as cast iron, slate and reclaimed wine barrel boards.

Step into the Wine Cave for a truly exceptional dining experience.  Accented with leather and enclosed in brick, the Wine Cave is home to the most valuable and rare fine wines on property.

The Wine Cave is a stunning private dining room with an outdoor terrace overlooking the Eucalyptus Grove.  Their collection holds over 250 bottles, as well as full sized oak barrels with their own private blends.

One of San Diego’s most superb and interesting collections, Rancho Valencia features wines sourced from micro-producers in France, Italy, Spain, California as well as wine sourced from Mexico, Canada, South Africa, Turkey and Tasmania.

Rancho Valencia is making its mark in the Southern California leisure market.  One of our Experts will be visiting the property next month, so look for a detailed report of her first-hand experience.  From what we can tell already, Rancho Valencia is not to be missed.
